It was such a crisp and clear fall day that I felt like making something warm and filling for breakfast, so I whipped up a batch of my favorite pancakes. They are the pancakes I grew up with, and the recipe is straight out of Tomie dePaola's children's book Pancakes for Breakfast.
A green monster with spinach, banana, almond milk, and mixed berries (supermarket was out of frozen blueberries, drat!) and a cucumber, pepper, goat cheese, and squirt of brown mustard sandwich on Trader Joe's Look Pa! No Flour! bread, lightly toasted. Mmm mmm.
After a while I realized that my productivity could be increased if I went to Starbucks and had a Pumpkin Spice Latte. That's what I convinced myself anyway.
I hung out there for an hour and a half, came home, and did my first ever Jillian Michael's 30 Day Shred. Normally, Friday is a strength workout day, but I couldn't put aside work long enough to go to the gym, and I think that Jillian was a perfect substitute. It was a good mix of cardio, strength, and ab work, and my thighs were burning afterward. I think our landlady thought there was some sort of army training going on upstairs every time roomie and I started the cardio section.

After Jillian I whipped up a quick dinner of brown rice and Trader Joe's Vegetable Melange with some Island Soyaki to make it a little more exciting. It looks plain, but it was actually pretty tasty! I even liked the cauliflower, which is a first. It would be better with a little chicken thrown in, but alas, we don't have any.
And that's my exciting Friday. My exciting Friday night is going to include: reading, reading, and more reading. Welcome to grad school.
The story follows a little old lady who gathers all the ingredients for delicious pancakes, even though her mischievous dog and cat almost spoil her plans. It's a picture book but it's great for kids of all ages. :)

If you decide to add pear to your pancakes, I recommend slicing it thinly and placing them on top of the pancake batter after you put it on the griddle. I chunked mine and that's why they are a variety of shapes, sizes, and colors!
After pancakes I started my enormous stack of reading for the week. Even though I have four day weekends, I don't ever think they will be carefree. So much work to do!

I spent most of my day reading for school and now I am catching up on blogs.
